Super healthy chocolate caramel slices

Chocolate is my greatest love and biggest downfall. After the chocolate orgy that was Easter, I’ve been trying to be good and stay off the stuff but the office vending machine keeps whispering my name.

In a bid to ween myself off the Class A variety, I’ve been experimenting in the kitchen with a few healthy alternatives. I recently blogged about Deliciously Ella and her glorious healthy food blog. This next recipe is one of hers and is a chocoholic’s delight. I love it.

Ingredients (makes about 20 slices)

For the base:
1 cup of almonds
1 cup of pecans
2 cups of dates
2 tablespoons of almond butter

For the caramel layer:
2 cups of dates
6 heaped tablespoons of almond butter
1/2 a cup of water
2 tablespoons of maple syrup
1/2 a tablespoon of coconut oil

For the chocolate:
1/2 a cup of cacao butter
2 tablespoons of raw cacao powder
2-4 tablespoons of maple syrup
2 tablespoons of almond butter
1 cup of dates

Method:
For the base, blend the almonds and pecans in a food processor until a grainy flour forms, then add the dates and almond butter and blend again until sticky. Scoop the base into a baking tray, pushing down firmly with a spoon before placing the tray in the freezer to set.

For the caramel layer, blend all the ingredients in a food processor until smooth and creamy. Pour onto the set base layer and put the tray back into the freezer for another hour.

Finally for the chocolate layer, melt the cacao and almond butter together in a saucepan on a low heat. Pour the liquid into the food processor with the remaining ingredients and then blend until smooth. Spread onto the caramel layer and freeze for another couple of hours. Slice and enjoy. Return any uneaten slices (!) to the fridge or freezer to store.
