The Weekend Edit: Susan Jane White’s probiotic brownies

I’m a massive fan of clean eating author Susan Jane White and her delicious recipes. If you like your superfoods with a side of sass, then you’ll love Susan (read my interview here). And just like her witty writing, SJW is as funny and generous in real life as she comes across in her beautiful cookbooks.

Susan’s debut book The Extra Virgin Kitchen is one of my go-to healthy eating cookbooks so I couldn’t wait to get my hands on her dessert book, The Virtuous Tart. Here is my favourite sweet treat from the healthy brownie queen herself.

Susan Jane White’s Probiotic Brownies

Ingredients
- 2 cups pecans or walnuts
- 1 teaspoon probiotics
- 9-12 medjool dates (regular dates won’t work)
- Good pinch of sea salt flakes
- 6-8 tablespoons cacao or cocoa powder

Method
Using a food processor, pulse the nuts and optional probiotics until they are crumbly. De-stone the dates and add one by one until blended. Add the cacao or cocoa powder and a pinch of salt before giving the mixture one final blitz.

Scoop into a loaf tin, pre-lined with baking parchment. Press down firmly with the back of a spoon and freeze. After one hour, remove from the freezer, chop into bite-sized brownies. Store in the freezer and enjoy straight from frozen.
